Hyeholdeโ€™s Prix Fixe Delight โ€“ Six Courses with Beer Pairing

After visiting the stunning Hyeholde in Moon Township for our anniversary, we knew we would have to return for one of their prix fixe dinner experiences (either the chef's table or a periodic themed menu offering).

Shortly thereafter, we got our chance with Hyeholde's annual beer dinner with Altered Genius Brewing to celebrate the release of their collaboration house beer, the Hyeholde Grisette.

We were guests of Hyeholde for this beer pairing dinner with Altered Genius Brewing, and share more in this review from this incredible six-course feast!

Hyeholde's Beer Dinner is a Memorable Dining Experience

Our evening started out with a VIP tasting add-on where we sampled four additional beers from Altered Genius Brewing in a structured tasting led by the brewers themselves.

Although pre-dinner beer tastings could run a spectrum of styles, this one was a seated experience that came with a few welcome bites and a sampling of what we would argue were some of the brewery's most unique beers- including their seasonal Jekyll & Hyde whiskey barrel aged sweet potato ales. (Hyde was a particular favorite of ours due to using Belgian yeast strains!)

In a normal circumstance, this beer tasting would've been a perfect night out on its own, but we had a six course dinner ahead of us which could only be described as a marathon, not a sprint.

Yes, it is one of those dinners!

Ribollita

After moving to the main building for dinner, we started our feast with a bowl of Ribollita (served with beans, sourdough bread, and wilted greens) paired with the Harvest Brown Ale. The hearty dish really set the tone for the evening, and the brown ale complimented the rich flavors in the broth nicely.

Fondue

The next course was a fun beer cheese fondue served with cheddar (yes, cheese on cheese), pretzel bites, pickles, and house cured charcuterie paired with a light and refreshing Rescue Kolsch. This dish really set the tone to make it feel like a taste around Europe, while also showcasing Hyeholde's immense skill at house made charcuterie.

Fish and Chips

This dinner felt like we had not one, not two, but three entrees, and the first was a fish & chips course served with fermented corn, hush puppies, and the star beer of the night- the Hyeholde Grisette (served in a full can pour for good measure). The light ester notes in the beer accented the delicate fish rather nicely, and is one of those beers that we think would go with many of Hyeholde's staple dishes on the conventional menu- we kept some to enjoy with each subsequent course and were glad we did!

So, for beer lovers, this new beer on the menu is a real treat.

Pork Belly

The rich trend of dinner continued with a beer braised pork belly on a delightful apple radish slaw with turnip sauerkraut and a caramel apple aigre-doux, paired with the Hoptruvian American IPA. Although the caramel apple notes of the aigre-doux was a bit on the lighter side, the texture of the pork belly and flavorful slaws more than made up for it, and the bitterness of the IPA offered a nice complement to the decadent pork. (Admittedly, we saved some of our Grisette to try with this course, and also enjoyed the pairing- esters for all!)

Venison Loin

At this point, we have to admit that we were stuffed, but the main course came out- venison strip loin served with beer jam glaze, brown butter squash, spelt, radicchio, and was paired with a classic Oktoberfest. This dish was perhaps the star of the show and was reminiscent of the elk strip loin that is my favorite on the regular menu. Hearty meat, cooked perfectly, with slightly sweet and savory undertones all around showcasing flavors that are classic Hyeholde through and through.

Candied Apple

Dessert followed with a candied apple dish which was more of a mousse covered in a glaze to mimic a candied apple along with kettle corn and salted caramel and served with Stephen's Island dry Irish stout. Given that we could barely eat another bite, we appreciated how light and delicate this dish was and offered classic fall flavors all around. The Irish stout did offer some nice flavor notes that went with the desert; however, we do admit that the more dry nature of the beer left us wanting a tish of sugar to go with the dish.

Overall, Hyeholde's prix fixe beer dinner was a real treat, and for its price, was also an incredible value. With six courses, a beer pairing at each, and four packs of the Hyeholde Grisette out the door to enjoy later (note, probably unique to this one particular dinner), we really couldn't have asked for more- well, beyond another stomach, at least.

Hyeholde Grisette

If you are a fan of Hyeholde's regular menu, do not overlook their prix fixe options. The beer dinner typically takes place just once a year, but they offer numerous fixed menus with wine pairings at rather reasonable price points for what you get. For regular dinner visits, their Hyeholde Grisette brewed by Altered Genius is a delightful beer all around. It is light, crisp, and has some decent ester notes that makes it a perfect pour to go with this restaurant's menu- don't miss it!
