Bill's Bar & Burger, located in the same building as the Westin downtown, is an over-the-top burger spot with a surprisingly delicious weekend brunch menu.
Although Bill's has several other locations in the New York area, the Pittsburgh location is developing its own character by using local suppliers and creating special menu items unique to the local dining scene.
The burgers are some of the most tender, juicy ones we've had in the city, the beer selection is pretty impressive, and the Bloody Marys at brunch are not to be missed.
Visiting Bill's Bar and Burger for Dinner
The first time we visited Bill's was during the Three Day Blow festival for food and drink writers. Although we are tailoring this article to our brunch visit, we would be doing you a disservice by not mentioning our first burger from Bill's.
Having gorged ourselves the whole weekend, we decided to split a burger (which came pre-cut to serve us individually- a nice touch but horrible for photos as you can see above). The “Blow Burger,” a special for the festival, was topped with grilled peaches and pulled pork marinated in Wigle Whiskey.
The flavor combination blew our minds, and the burger was so tender and moist, too. The Mexican street corn we got on the side was spicy and cheesy.
We caught ourselves calling this one of the best burgers we've had in the city, but we had to return to be able to write a full-fledged review.
Returning to Bill's for a Sunday Brunch
When Bill's invited us out to check out their new brunch menu, we just had to check it out. The menu includes their signature burgers, salads, as well as more breakfast-oriented fare like waffles, pancakes, steak and eggs, and a kielbasa benedict.
Although the beer menu (the “Beer Bible”) is quite impressive (including over 20 beers on draft, many of them from local breweries), we weren't quite feeling the beer so early in the morning. Instead, we opted for Bloody Marys.
Usually our complaint about Bloody Marys is that the tomato flavor is overpowering and not balanced. But the Bloody Marys at Bill's have a nice horseradish bite and hot sauce spiciness. And if you really want to go over the top, make sure to try their Bloody Mary with a “mini B” – this one comes with a monstrous burger slider in it!
This one is so over the top and yet perfect all at the same time.
For entrees we decided on the breakfast burger, which is a sausage patty served on an English muffin with bacon, a fried egg, a roasted tomato, and a bearnaise sauce. It was a good, hardy breakfast sandwich with the richness of the bearnaise complemented by the sweet acidity from the tomato.
The star of our brunch was the buttermilk crispy chicken- basically, some of the best chicken and waffles we've had anywhere. The chicken was coated in a batter containing rice krispies, which made it extra crispy and just a little sweet.
The waffle was rich and infused with thyme, providing a hint of freshness. And all of this was bathed in an intoxicating buffalo maple syrup that had just a hint of heat.
The service during each of our visits has been great, too, with waiters who took the time to connect with us and make recommendations based on our likes and dislikes.
Bill's Bar & Burger is located at 1001 Liberty Avenue in the lobby of the Westin Convention Center in downtown Pittsburgh.
